Let FOOD Be Thy MEDICINE And MEDICINE Be Thy FOOD

This is the very 1st Health & Wellness Lecture I did as “The Minister Of Wellness,” October 2015. I explain the healing power of natural medicines found in plant foods. I then give an explanation of the powerful medicines found in Dr. Joel Fuhrman’s famous “Apple Bok Choy” Salad.

Apple Bok Choy Salad Recipe

Serves: 2-4 servings
Ingredients
  • FOR THE SALAD
  • Three large leaves bok choy, chiffonaded
  • One large apple, mandoline sliced
  • One large carrot, grated
  • ½ cup red onion, sliced thinly
  • FOR THE DRESSING
  • ½ cup unsweetened soy, hemp, or almond milk
  • ½ cup raw cashews (soaked in water for 30 min or more if using a standard blender, then drained) or ¼ cup raw cashew butter
  • ¼ cup balsamic vinegar
  • ¼ cup raisins (soaked in water for 30 min or more if using a standard blender, then drained)
  • One teaspoon Dijon mustard
Instructions
  1. Add all salad ingredients to a large bowl and mix to combine.
  2. In a blender, add all the dressing ingredients and blend to combine until smooth and creamy. Serve the salad with dressing mixed in. Tip: Don’t dress the salad until ready to eat, and that way leftovers can be kept in separate containers in the fridge for 3-5 days.
